Whole Food Pumpkin Energy Bar

Sarah Guilbert, RD from Midtown Athletic Club in Rochester, NY created a recipe for a Whole Food Pumpkin Energy Bar that incorporates all the yummy flavors of the winter season without the chemical preservatives and artificial food dyes found in many packaged granola bars.

As an added bonus, this recipe includes no added fat and only 2T of honey added as a sweetener. Thebar provides 96% of your daily needs for vitamin A and 11% of your daily iron needs. 

Ingredients:
Dry:
2 cups oats
¾ cup coconut flour (may sub whole wheat flour)
½ cup pumpkin seeds
½ cup sunflower seeds
2T cinnamon
1 tsp nutmeg
¼ tsp ground cloves
¼ tsp ground ginger
1 tsp salt
1 tsp baking soda
½ tsp baking powder

Wet:
2 ripe bananas, mashed
1 cup applesauce
3 cups pumpkin puree
1 cup raisins
6 dates, chopped
2 eggs
2 T honey

Instructions:
1. Mix wet and dry ingredients separately and then combine in a large bowl.
2. Grease a large sheet pan.
3. Spread pumpkin mixture over sheet pan and smooth with back of stirring spoon (or spatula) until evenly distributed.
4. Bake at 375 degrees for about 35 minutes. They will be moist when you take them out of the oven, but will become a soft-baked consistency after you let them sit for a couple of hours.

Tip: These taste even better the day after you make them!

Nutrition (1/24th of sheet pan): 122 calories, 3g fat, 1g saturated fat, 14mg cholesterol, 165mg sodium, 22g carbohydrates, 4g fiber, 3.5g protein.
