Not only is this recipe paleo, but it’s so easy to make and even better to eat. With only a few ingredients, it’s the perfect “in a jam” healthy dinner recipe. I doubled it for a birthday party and people couldn’t get enough of it. It seemed that no matter what diet people were currently following low carb, no sugar, no processed foods… it still fit. My boyfriend especially enjoys it when I make a batch before going out of town, that way he’s not only guaranteed not to starve to death while I’m gone, but I know he’s not eating fast food because he’s too lazy to cook.


  • 1 Yellow Onion, chopped
  • 2 ½ TBSP Coconut Oil
  • 1 tsp Salt 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • 1 Large Butternut Squash, peeled, seeds taken out and chopped into cubes
  • 1 quart Vegetable Stock
  • Pecans, chopped for garnish


1.In a large pot or dutch oven sauté the onion in the coconut oil for approximately 5 minutes

2.Add salt, cinnamon, and nutmeg, stir

3.Add in chopped butternut squash and vegetable broth

4.Cover and boil the butternut squash until tender, approximately 25 minutes

5.With an emulsion blender or food processor puree the soup until a smooth consistency
