Zucchini and Carrot Patties Recipe

Hey guys! I wanted to give ya’ll another ‘clean eats’ favorite recipe of mine. Burgers, everybody loves them, right? Unfortunately, they are not the healthiest things around so I’ve come up with a burger recipe of my own, Zucchini Carrot Burgers. So easy, and very few ingredients!! These are also great for kids for them to get into servings of vegetables.

Ingredients:              zucchini carrot burgers ingredients

  • 1 Large Egg
  • 1 Zucchini
  • 1 Carrot
  • 1 Cup Old Fashioned Oats- blended to make a  flour consistency
  • ¼ cup parmesan cheese
  • ½ cup water
  • 1 Tbsp Chili Powder
  • ½ Tbsp Parsley Flakes

Directions:

Using a potato peeler, take the carrot and make strips. Once the whole carrot is into slices, take a knife and chop into smaller pieces. Do the same for zucchini. For the oats, I used my magic bullet to blend 1 cup of the old fashioned oats, it comes out like flour. I make a lot at a time to last me a little while, then store what I do not use in a container. Once you have everything cut up and the oats blended, mix all ingredients together in a large bowl.

While you are getting everything together, spray a pan and heat on medium to high heat.zucchini burgers

As you can see, this is what it looks like when all mixed together. You may or may not need to add more water into the mix. You want the “dough” to be semi wet so they ingredients will stick together.

Roll dough into balls and place on pan, probably about 6 or so at a time, depending on the size of the pan.  Try to make sure all pieces of carrots and zucchini are attached to the dough ball, otherwise it may all fall apart on you! Cook on one side for about 2 minutes, and flip. After flipping, take spatula to flatten out into a patty shape. Be careful though because they patties will be fragile. Cook for another 2-3 minutes wah-lah!

Cook patties until you run out of dough; I was able to get 20 burgers from this amount which should last me a couple a meals.

You can serve these alone, with some Sirracha or hot sauce, on a bun, your choice!
