cauliflower crust mexican pizza

For Cinco de Mayo,  I wanted to be able enjoy some of the Mexican celebration my own way, without feeling guilty about what I was eating!  Who doesn’t love pizza? This girl does!!! With that, I came up with a Cauliflower Crust Pizza Recipe for Mexican Pizza. I did some research through instagram (love that application), and Google to find ways of making this.Cauliflower

Ingredients for Crust:

  • 1 Head of Cauliflower
  • ¼ Cup of Parmesan Cheese
  • 1 Egg
  • 1 Tbsp chili powder
  • ½ Tbsp Ground Cumin
  • Pizza Stone
  • Parchment Paper

Serving Size: 8 small slices 

Directions:

Cut off cauliflower florets, you do not need much stem for this recipe. Pulse florets in a food processor until it appears to be like “snow”. Usually takes about 30 seconds. Once done with that, place in a bowl and steam the riced cauliflower for 4- 8 minutes in the microwave. After, place the steamed cauliflower onto a clean dish towel. The next step is important. Let the cauliflower cool. Once it is cool enough, wrap the towel around the cauliflower and drain, you want it to be as dry as possible. You’ll be surprised by how much water comes out!!

Once that’s finished, mix together cauliflower, egg, cheese, and spices together in a bowl. After everything is all mixed, place mixture onto parchment paper on your stone to resemble the shape of your pizza. Make sure it is evenly spread out throughout.

That’s it!

Now, bake at 350 for 20 minutes, or until golden brown.jalapenos

Now for the Toppings:

  • Jalapeño Queso
  • Mexican Shredded Cheese
  • Sliced Black Olives
  • Jalapeño Peppers
  • Shredded Lettuce
  • Shredded Chicken

Of course you could add whatever toppings you’d like, but for this I chose a Mexican theme going.

First, add your sauce, cheese, and then toppings on top.  After you have it how’d you like, bake for another 10-15 minutes, until the cheese is melted.

Tip: Chicken was cooked throughout the day in the slow cooker. It was something I didn’t want to have to worry about. While cooking, I had ½ cup of water mixed with taco seasoning and chicken.
