Oatmeal Cookies

Don’t let the name fool you, while these cookies are all natural and Paleo friendly, there are ridiculously scrumptious. I’ve taken them to every BBQ, picnic, and family gathering over the last month, and there hasn’t been one unsatisfied mouth yet. The only negative I have to say about them, is that they’re incredibly addictive. Good luck eating just one.


  • 2 cups almond meal/flour
  • ½ cup flax seed meal
  • ½ cup unsweetened, shredded coconut
  • ½ cup raw sunflower seeds
  • ½ cup raw pumpkin seeds
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 eggs
  • ½ cup pure maple syrup
  • 1 tsp vanilla extract
  • ½ cup coconut oil (melted)
  • 1 cup raisins


  1. Preheat oven to 350ᵒF
  2. Combine all dry ingredients in a large mixing bowl
  3. In a separate bowl, combine all wet ingredients
  4. Stir wet ingredients into dry ingredients
  5. Stir in raisins
  6. Drop tablespoons-sized balls of dough onto parchment lined baking sheets
  7. Bake the cookies for approximately 18-23 minutes
