Light Summer Salad Recipe

This summer salad is great to have after a hard workout. It’s light and still has all the nutrition needed to re-energize your body. Protein, carbs, greens, and veggies!

Here’s the recipe:

  • 3 Red Potatoes
  • 1 Chicken Breast
  • Spring mix
  • Baby spinach
  • Black olives
  • Carrots
  • Light Italian Dressing (dressing of your choice—stick with a light)

Boil the potatoes for 10-15 minutes. While the potatoes are boiling, grill up the chicken breast.

Once those two items are cooked throw your lettuce into a bowl. Add potatoes, chicken, carrots, black olives, and your favorite dressing.
